I would like to be able to downmix some DTS discs I have so I can make stereo CDs/MP3s I can play in my car. Right now I don't even have any software that will play DTS 5.1 on my computer. What software can I use to do this? Can I even play 5.1 DTS on the standard DVD player in my computer? Or do I need something else?

Audiomuxer can do that (and a lot more :)). (Tools/Audio Conversion)

Foobar wih dts component can play dts.
 
I can play it using Foobar with the DTS plug in just fine, but AudioMuxer doesn't recognize the files. They seem to be showing as .cda files? Do I need another plug-in/program to convert these to .wav or MP3 or something else easily playable?
