In my dreamscape, there's some Parliament/Funkadelic, Prince's 1999, the National's Sleep Well Beast, and earlier titles from The Pineapple Thief. And Dylan's Time Out of Mind. And a good Fela Kuti title.

I'll echo the wishes for Zeppelin and those atmospheric John Martyn albums, too.
 
All Things Must Pass - a surround mix would open up this great album that's a sonic mess at times
The Pretender - Jackson Browne (a release of the quad "Late for the Sky" would be a great alternative)
Desperado - Eagles 2nd album with an alleged quad mix in the can
Linda Ronstadt Very Best of - Some of these tunes are total classics
The Wall - of course
America - (First Album)

Rust Never Sleeps (Studio, not live)

Jon, did you see the new Linda Ronstadt documentary, "The Sound of My Voice"? It is very good - I think it will be on CNN after it finishes it's theatrical run.

There’s a lot of classic soul/R&B I’d die to have in 5.1:

Any 70s Stevie Wonder, but especially Songs In The Key Of Life.
Any classic-era Prince remixed by Steven Wilson (who is one of the world’s biggest Prince fans)
Sly and the Family Stone - Stand! (some of the tracks are in quad on the Greatest Hits SACD, but *wow*, would I love an actual 5.1 mix of this — I was hoping maybe they’d do a Super Deluxe for the 50th anniversary this year, but no such luck)
Michael Jackson - Thriller
Earth, Wind & Fire - I’d settle for the Greatest Hits albums in 5.1
