Sometimes, I'll start the conversion process within Foobar, and things are running along fine, and suddenly it drops to 0.0. How can that happen, is there some setting I need to adjust? When I go to task manager, my system isn't bogged down whatsoever.

Source or destination on external drive? If yes, it may be a disconnection issue.
 
It is FOOBAR! I've just done about 200+ of these, here's a few tips I learned:

1. If warned that 1 or more tracks had issues, your disc ISO may still work. Open the ISO in FOOBAR and Convert ONLY that missing track. Then you have the full album intact.

2. When it's working at snail's pace (0.00% for whatever reason), cancel the album conversion and Convert single tracks. It seems to work very quickly on troublesome ISOs.

3. Don't be running MP3 Tag or MMH at the same time as the FOOBAR ISO Convert they battle for resources at times. (I do love to multi-task but Convert is a hog)
