I've been searching for a way to convert DTS streams ripped from concert DVDs into DTSWAV files so that I might play them over my AppleTV (via the Apple Lossless format).

I know the essential process:
Rip DTS Stream (check)
Separate them into 6 individual WAV files
Combine these WAV files into a single DTSWAV file
Convert to Apple Lossless
Play and enjoy

I know that there are a couple of programs on Windows that will do this, but I've yet to find a method on OS X. I have seen the VLC method (which does work, just not with the DTS streams ripped via MacTheRipper.

Any help would be appreciated.

I don't know mac but maybe I can help with some general concepts that may apply to your situation.

Seems like you have a multichannel dts file. Instead of splitting into six individual wavs and then recombining the wavs, I've had luck with just changing the file extension from .dts to .wav. Not sure if mac uses file extensions, sorry.

Another way to convert multichannel dts to multichannel wav is to use foobar2000, load the dts file and convert to wav. There again don't know if foobar works with mac.

Hope some ideas here can work for your case.
George
