Was any of his music even released in Quad or 5.1? If not, then that's not a very likely suggestion.
(From what I can see the specific album you mention, "Jazz", was definitely not released in surround)

No Ry Cooder Quad or 5.1 mixes I am aware of.
But there are 2 SACDs (one now out of print) and 3 Stereo DSD Downloads with Ry Cooder.

Long out of print, but worth picking up - Buena Vista Social Club with Ry Cooder was released in 5.1 back in 2000.

Just don't buy it online from Goodwill. They need to stock these in their stores, since maybe the store would be worth walking into then rather than the parking lot being empty.
