Supposedly the Guns n' Roses Use Your Illusions albums were originally meant to be produced for surround (I think Slash's book says that), and the heavily produced (some say bloated) nature of the albums seems like an ideal fit.
Like most people I'm a bigger fan of their first album, but that one is just fine in stereo (although it's a damn shame the stereo blu-ray audio of Appetite for Destruction never materialized).

I'm a big fan of Tori Amos. Her album, "Boys for Pele", would be great in 5.1. In fact, I think her entire catalog of music would be a wonderful candidate for 5.1.
"Tales of a Librarian" has a bonus DVD disc where she has a few tracks in Dolby Digital 5.1. The sound is exquisite with amazing bass on the live track of "Pretty Good Year".

Haven't read through the entire thread but my ONE choice is Electric Ladyland by The Jimi Hendrix Experience. Jimi's multi-tracked guitars and vocals scream for proper surround treatment ala Scheiner or a Wilson!
